Pesto
Pesto from the Moosewood, Kim's been making this for decades!
Description
A simple and delicious basil pesto. For pasta, roasted fish, and other delicious things!
Ingredients
- 3 cups Basil leaves, packed tightly. (Take leaves off the stems)
- 2 cloves Garlic (large cloves, or more to taste)
- 1/2 cup Pine nuts (Can also use walnuts, almonds, or a combo)
- 3/4 cup Parsley (fresh, chopped, OPTIONAL)
- 3/4 cup Parmesan or Pecorino Romano (3.5 oz if you measure before grating)
- 1/2 cup Olive Oil
- 1/4 cup Butter, melted
- Salt (to taste)
Instructions
- 1 Add ingredients together
You can put chunks of cheese in the Cuisinart and chop first, then add the rest of the ingredients.
Combine ingredients in a blender or Cuisinart.

Process into a thick paste
Blend to desired consistency. Salt to taste.
